I have gone through my archive and selected a 5-bottle selection. They are some of my favourite bottles from the last few years. Each one of them is selected since they drink really beautifully right now and they are the final bottles remaining in the cellar.

Qvevri Reserva

• Spontaneous beer aged in qvevri and oak barrels for almost four years in total, with organic Riesling grapes added.
• One of the most distinctive beers I have made. I love how elegantly it drinks.

Here and Now: Pinot Noir & Cherry

• Spontaneous beer aged in oak barrels with local Pinot Noir grapes and cherries added. Blended from five years.
• My favourite version of my “kriek”, with a distinctly Pinotesque elegance.
  
  

Here and Now: Apricot

• Spontaneously fermented beer aged in barrels for two years with local apricots.
• I love its softness. Aromatic apricots and a lower gravity blend just work wonderfully together.

It Was Not The Light That Saved Me

• Rustic beer aged in a gin barrel for over a year.
• A special collaboration made for my friend Dan Park and released only in Korea. These are the few bottles from my cellar.

Pebbles

• A 3% rustic beer aged for a year in a local acacia barrel, made entirely with local organic ingredients.
• Deeply moreish, and the beer I find myself returning to most often.
